Easter Fruit Kabobs

- Fruit of choice
- Bunny cookie cutter
Instructions:
Cut up your fruit and thread onto wooden skewers to make your kabobs. If you want to make them more festive, use a bunny cookie cutter to cut the fruit at the top of the kabob.
Easter Bunny Race Car Treats
These adorable Easter Bunny Race Car Treats are pleasing to the eyes and are mouth-watering. They will be a hit with children and bring out the child in adults.
Ingredients:
- 4 Twinkies
- 1 tube of cake frosting
- 16 marshmallows
- 4 pretzels
- ¼ cup M&M’s
- 4 Bunny Peeps
Instructions:
Make a rectangular cut on the top of each Twinkie 3/4ths of the way down. Next, place a Peeps bunny into each newly cut space, along with a pretzel stick in front of each bunny. Afterwards, cut two marshmallows in half. Using frosting as glue, stick the marshmallow halves on each side of your Twinkie and an M&M in the center of each marshmallow to represent the wheels. Now they are ready to race!
Cheesecake Eggs
This cheesecake egg recipe is a wonderful way to show off your creativity while making a delicious snack.
Ingredients:
- 12 small balloons, rinsed
- 1 ½ cup of semisweet chocolate chips, melted
- (2) 8 ounce blocks of cream cheese, softened
- ½ cup powdered sugar
- ½ cup heavy cream
- 1 teaspoon pure vanilla extract
- pinch of kosher salt
- ? cup apricot jam
Instructions:
First, line a baking sheet with parchment paper. Blow up the balloons in the shape of an egg, and dip into the melted chocolate, leaving the tops uncoated. Transfer the baking sheet and freeze until firm for about 15 minutes. Meanwhile, use a hand mixer to beat cream cheese, powdered sugar, heavy cream, vanilla and salt into a large bowl. Cut the tops of the balloons to pop and gently peel out each balloon from the chocolate shells. Spoon or pipe the prepared cheesecake filling into the shells, and top with a spoonful of apricot jam. If the jam slides off, you can freeze 10 minutes to firm.
Rice Krispie Nests
These Rice Krispie Nests are great snacks to have at a family get-together. They are charming, easy to transport and simple to make.
Ingredients:
- 4 cups of marshmallows
- 5 cups rice cereal
- ¼ cup of coconut oil
- 2 teaspoons vanilla extract
- 2 cups of mini candy eggs
Instructions:
Start off by greasing a 12-cup muffin tray and set aside. Then place the marshmallows in a large microwave-safe bowl, heating for approximately 25-30 seconds. Stir well and repeat heating process if needed. Add the melted coconut oil and vanilla extract to the marshmallows, stirring well. Next, add the rice cereal a cup at a time while gently folding it into the marshmallow mixture until all 5 cups of rice cereal are incorporated. Scoop heaping ¼ cup portions of rice krispie treats into the muffin tray. Wet your hands to press the rice krispies into a cup or tart-shape and place in fridge for 2 hours or overnight to set. After you have let the rice krispies set, use a butter knife to pop them out of the tray and then add your candy eggs on top.
